Wash and dry all produce. Halve, peel, and mince @garlic{3%cloves}. Chop @scallions{2%stalks} and @bok choy and napa cabbage{2%cups}.

In a #large pot{}, combine @ground pork{0.5%lb}, @water{3½%cups}, @chicken stock concentrate{1%unit}, @pork ramen stock concentrate{1%unit}, and half the @soy sauce{2%tbsp}. Cover and bring to a simmer.

Once broth is simmering, reduce heat to medium. Add @ramen noodles{2%packets}, bok choy and napa cabbage, and @spinach{1%cup}; simmer, stirring, until noodles are tender and pork is cooked through ~{2%minutes}.

In a #small bowl{}, mix remaining soy sauce, @sesame oil{1%tsp}, @chili flakes{1%tsp}, @sesame seeds{1%tsp}, minced garlic, and chopped scallions to make chili garlic oil. Set aside.

Divide ramen between large soup bowls. Top with @crispy fried onions{1%cup} and stir in as much chili garlic oil as you like.
